Bespoke Catering and Take Away meals

With the installation of a small production kitchen on the market floor in 2004, Patrick Williams set out to provide a specialist takeaway service from The Goods Shed. Prepared foods are sold from a refrigerated daily display with a gantry shelf above the preparation area selling fresh made pastry work. In front of this kitchen there is a tiny 3 seater diner where customers may eat from the selection on display or commission their own menu: a late breakfast, light lunch or special celebration. Patrick’s kitchen simply exists to provide excellent fresh food for take-away, for bespoke outside catering or to eat at the 3 seater.
Take-Away from the display fridge
The kitchen’s display fridge offers a daily selection of light first, main and desert courses. Apart from a few ingredients (Valrhona chocolate from Madagascar or the Caribbean, Peat-smoked salmon from North Uist, rices and spices etc) Patrick’s Kitchen’s suppliers are more immediate than local – The Goods Shed butchery, Simon the Fish, Cheese Makers of Canterbury, Murray’s General Stores, Philip Knight’s fruit and vegetable co-operative and Clive Barlow’s Press Wine Services. With these supplies, Patrick’s Kitchen applies all cooking disciplines to prepare seasonal menus of terrines, salads, stews, pastrywork, puddings… and sausage rolls.

Bespoke Catering
With continuous food preparations required to service take-away, Patrick’s Kitchen is often able to supply short notice commissions. The kitchen functions as a traiteur (this french word only has an awkward translation ‘cook shop owner’). In addition to ordering ahead from our existing selections, customers are very welcome to specially commission work: a single terrine, a dessert, an entire picnic, lunch or dinner. We sometimes suggest that customers may supply their own pastry tins, terrines or casseroles for us to customise the dish to be taken away. In addition, Patrick’s Kitchen specialises in the production of canapes, often simply from existing lines in miniature.

The 3 Seater Diner
The Diner counter faces onto the Kitchen’s food preparation bench and it houses just 3 original late 1950′s chrome stacking seats with red imitation crocodile covers. The height of this counter allows customers of all heights and ages to sit, eat and view the kitchen action comfortably. With the High Speed train now coming to Canterbury, the Kitchen has been delighted to serve customers who might prefer to escape London restaurant prices: those same customers can also leave with a take-away, arriving back in London with supper already organised. From the Kitchen’s point of view, this tiny facility allows us to stretch our culinary limbs with the provision of a more active mise-en-place for risottos, or souffles for example. Paper and pencils are also available for those who want to take cooking notes, tips or even impromptue lessons (only at the customer’s request). We welcome special menu commissions and encourage visitors to look at our neighboring traders displays where they may find perhaps some meat, seasonal veg for us to cook them. Booking fo one or all three seats are welcome, if sometimes not essential.
